Never underestimate the impact of even the most menial tasks on your list, chef. Even if you spend six hours everyday this season peeling apples. Because there’s a bigger purpose to everything you do.
Those apples go into a dish. That dish makes your customer happy. Which brings more people to your neighbourhood and fosters the local economy. That means more jobs in surrounding businesses. And that your producers can afford to keep growing food. They can support not only their kids, but all those little creatures that live in the farm ecosystem.
