When you lead a kitchen, you’re the one that the others turn to for answers. But there are so many things that you might not know yourself, and that has nothing to do with your capabilities.

How do you know if things will turn out okay? Believing in someone enough to promote them. The risks that you take with a new supplier. Raising prices on your menu.

You do whatever you can and then at some point, without thinking, you trust that it will all work out. Because even when you’re holding all the responsibility, you can lean into fortune, luck, some unknown force or whatever it is that helps you on your journey.

It’s never your job entirely to make it happen, chef.
